Trofý.Lab is a living lab of ideas and action, with a vision to radically reframe the meaning of Food in our cities. We explore the Journey of Food — from soil to plate — through the lenses of sustainability, proximity, and justice.

We design and implement solutions that empower small-scale producers, spotlight organic products of high nutritional value, and weave together short & transparent Food Supply Chains.

We champion the fusion of Land & Technology, leveraging open-source tools and participatory methodologies, always in harmony with natural rhythms and with respect for people and planet.

With the expertise and experience of Trofý, we actively contribute to reshaping Urban Food Systems — promoting urban ecology, self-sufficiency, and the collective stewardship of the commons.

the story so far

Trofý.Lab was founded in 2020, as successor of a personal initiative that began in 2019. From the beginning, we’ve been committed to bridging nature closer to the urban fabric, creating greener, more humane cities and fairer Food relationships.

Driven by our passion for Nature & Soil and by our vision of vibrant, resilient cities, we design and implement:
urban farming projects & foodscape  design,
digital applications & research initiatives, and
green infrastructures,
all aligned toward a common purpose: the transition to sustainable, local, and open Food systems.

Our flagship projects span a diverse field — from small edible wonders like school gardens and backyard patches, to digital tools and collaborative research platforms — all working to reimagine the role of Food in the life and body of the city.

We place participatory design, urban resilience, and the green transition at the heart of what we do — with Food as a vehicle for change, cultivation, and care.

Petros – Founder & Project Lead

Petros began his journey in business intelligence and performance management, but soon realized that real change starts with the soil. That insight led him to create Trofý.Lab, a space where food is more than a commodity; it’s culture, community, and knowledge.

His dream? To trade the city’s relentless motion for the calm of a coastal field, where he can grow food for himself and the people he loves.

Konrad – Permaculture Specialist
Konrad has dedicated his life to biodiversity, permaculture, and botany. He’s learned to listen to plants, to understand their needs, and to shape ecosystems that thrive in harmony with nature. When he’s not experimenting with new cultivation techniques, he turns to music – another way of creating rhythm and harmony, whether in the soil or in sound.
Dimitris – Digital Ops. Lead
Dimitris discovered the joy of growing food at 17, when he planted his first vegetable garden. Since then, his love for the land and agroecology has shaped his way of life. At Trofý.Lab, he bridges technology with sustainable agriculture—managing our digital infrastructure and leading research on innovative programs that promote open knowledge and ecological practices. Born and raised in Thessaloniki, he envisions his city filled with urban gardens—small, radical cells that reconnect people with the earth and with each other. For him, technology is a tool for sustainable change, where the digital and the natural coexist in harmony.
Katerina P. – Architect
Raised in a rural farming region, Katerina brings hands-on experience in agricultural cultivation. From an early age, she developed a deep understanding of he bond between humans and nature, along with a passion for creatively solving real-world challenges. She is currently studying architecture at the University of Thessaly, with a focus on sustainable design.At Trofý.Lab, she shapes the architectural vision of each project —from technical drawings to photorealistic renderings — translating ideas into space and form.
Katerina M. – 3D Designer
Born and raised in Crete, Katerina developed a strong bond with nature early on—recognizing its quiet power in everyday life. Though trained as a Textile Engineer, her natural talent for visual design led her to the world of 3D, where she found her creative language. At Trofý.Lab, she brings ideas to life by visualizing spaces that reflect the team’s projects—capturing the harmony between nature and the urban landscape. Her goal is to help shape more sustainable cities, where nature is not sidelined, but becomes an essential part of daily life.
Kostis – Industrial Design Lead
Kostis found his connection to nature through design and urban agriculture. At Trofý.Lab, he designs sustainable growing systems — building bridges between the natural world and the urban environment. He sees agroecology not just as a method of cultivation, but as a way to reimagine the city — where greenery is not a luxury, but a necessity.
Konstanden – Civil Engineer & Natural Builder
Since childhood, Konstanden has been building treehouses and shelters – spaces that respect nature rather than disrupt it. Natural building and self-sufficiency became his passion, and through Trofý.Lab, he works to bring them back into the fabric of urban life. For him, sustainable architecture is the key to helping cities breathe again – bridging innovation with ancient building wisdom.
Stefania – Graphic Designer
Stefania began in mechanical engineering but found her true path in graphic design and visual communication. At Trofý.Lab, she transforms ideas into imagery — shaping the story of sustainable urban agriculture through design. Passionate about permaculture and ecocommunities, she believes art and nature are deeply interconnected — and that creativity can be just as regenerative as the earth itself.
Olti – Agronomist
Olti’s love for nature began in childhood and eventually became his profession. He studied Agronomy with a specialization in plant production, always seeking ways to grow food in harmony with the environment. He dreams of working on large-scale regenerative projects — transforming desertified landscapes into fertile ground and proving that nature can always come back to life.
