Urban gardens, food policy, and participatory models for sustainable cities
At Trofý.Lab , we collaborate with municipalities and civil society actors to design and implement pilot projects in urban agriculture, short food supply chains, and local food policy tools.
Projects like Urban Eden and Seed the City, operate as living labs, combining:
Urban food production in underutilized public spaces
Social inclusion of vulnerable groups through cultivation and training
Participatory design tools for local communities
Digital monitoring systems (KPIs, food costs, traceability)
We develop model microfarms, school gardens, and green infrastructure in partnership with local authorities, social organizations, and active citizens. At the same time, we contribute to the development of Municipal Food Policies, linking food production, distribution, and consumption with indicators of public health, social cohesion, and climate resilience.
Trofý.Lab supports cities in integrating urban food systems into their strategic planning—aligned with the Green City Accord, the circular economy and the Sustainable Development Goals (SDGs).

Schools & Nonprofit Organizations
Hands-on food education and environmental participation for the next generation
At Trofý.Lab, we design and implement model school gardens and edible learning environments that transform rooftops, courtyards, and schoolyards into living labs for experiential learning.
Our interventions immerse students in:
the principles of sustainable and regenerative agriculture,
circular resource management (composting, rainwater harvesting, reuse),
collective environmental stewardship,
and the cultivation of high-nutritional-value food.
Each project is supported by participatory design toolkits, monitoring technologies (IoT sensors, digital dashboards) and interdisciplinary workshopsthat connect school, neighborhood, and nature.
Through initiatives like “Green Breaths” at the 2nd Model High School of Athens and the “Seed the City” urban labs, students gain life skills, take part in shaping their environment, and become active changemakers in building a more just, resilient, and sustainable future.
We also collaborate with nonprofit organizations, inclusive schools, and community groups to create safe, productive, and educational green spaces that center community, food sovereignty and equitable access to nutritious food.

At Trofý.Lab, we collaborate with hotels, restaurants, and Ho.Re.Ca. businesses to create productive urban gardens tailored to each site—whether rooftops, courtyards, internal patios, or rooftop bars. These spaces become green islands of cultivation and experience seamlessly integrated into the guest journey.
